Crêpes filled with a spicy omelette

There are numerous recipes that present crepes with unusual toppings. But did you know that the French snack also tastes great when it is filled with an omelette? Yes, you read that right: Here a crepe is filled with a spicy omelette – and this is how it works:

For this you need:

For the crepe dough (approx. 8 pieces):

  • 120 grams of flour
  • 250 ml milk
  • 3 eggs
  • 30 g melted butter

For the filling (per piece):

  • 1 egg
  • salt
  • pepper
  • red bell pepper, cut into strips (approx. 30 g)
  • Ham, cut into strips (approx. 25 g)
  • grated mozzarella (approx. 30 g)
  • grated cheddar (approx. 15 g)

That is how it goes:

1.) Mix the flour and milk together for the crepe dough. Then add the eggs and butter and stir everything into a creamy batter. Then place the dough in a flat mold that is larger in diameter than the bottom of the pan. Heat the pan on the stove, then oil the bottom and gently press it into the crepe batter.

2.) Place the pan on the stove so that the underside with the dough adhering to it is on top and bake the crepe until golden brown.

3.) Then put the crepe in a bowl and whisk the egg with salt and pepper.

4.) Then add paprika, ham and mozzarella.

5.) Now fold up the crepe and heat it in a lightly oiled pan. As soon as the egg is lightly set, turn the crepe over. Then sprinkle it with cheddar cheese, cover the pan and cook it for about 3 minutes until the cheese has melted.

Sprinkle the crêpe filled with omelette with herbs of your choice and serve with a fresh salad. Not only is this hearty meal a great way to start the day, it also tastes great for lunch and dinner.
