Meatballs & spaghetti on a stick

A classic combination that never disappoints is spaghetti with minced meat. But you’ve definitely never eaten them in the following way. This recipe shows you how ingenious you can make meatballs with cheese and spaghetti, deep-fried in tempura batter. A delicious “finger snack” that goes perfectly with a party buffet or a TV evening with friends.

For this you need:

For the meatballs (approx. 15 pieces):

  • 500 g ground beef
  • salt
  • pepper
  • 80 g coarse breadcrumbs (panko flour)
  • 1 egg
  • 1 tbsp chopped parsley
  • 200 g cheddar, cut into small cubes

For the pasta balls:

  • 300 g spaghetti (slightly more firm to the bite, boiled in salt water)
  • 1 egg
  • 1 egg yolk
  • pepper
  • 15 small mozzarella balls

For the tempura batter:

  • 160 g wheat flour
  • 30 g cornstarch
  • 10 g baking powder
  • 1/2 teaspoon salt
  • 360 ml of water with ice cubes

Also:

  • Wooden skewers
  • Paprika powder

That is how it goes:

1.) First, prepare the tempura batter. To do this, sieve wheat flour, cornstarch and baking powder and add salt. Mix everything together. Add water (the water must be very cold, if necessary you can cool the water down with ice cubes). Beat the batter vigorously with a whisk until the batter bubbles and only a few lumps remain. Then place the dough in the refrigerator for half an hour.

2.) Put the minced meat in a bowl and add the egg, breadcrumbs, parsley, salt and pepper and mix everything together.

3.) Shape around 15 flat meatballs with your hands and place a piece of cheese in the middle of each. Form balls out of the masses and first put the meatballs in the cold.

4.) Now cook the spaghetti in salted water. Pour off the pasta water, add an egg, another egg yolk and a little pepper and let them cool.

5.) Now the “assembly” begins. Skewer a meatball on a wooden stick, then slide a mozzarella ball onto the skewer and wrap the spaghetti around it. If you knot the spaghetti together beforehand, they will hold better on the skewer.

6.) Place the tempura batter on a flat plate and sprinkle half of the batter with paprika powder. Pull the skewer through the dough so that the light-colored dough sticks to the pasta and the dough that has been mixed with paprika sticks to the meatball. Bake the skewers in hot fat and then drain them on kitchen paper.

The best thing to do is to offer the delicious minced spaghetti skewers with various sauces. It is real “food porn” how the two different types of cheese flow out of the balls when you bite off. A culinary dream. Enjoy the meal!
