Mole cake with coconut cream and bananas

Everyone knows mole cake, right? These are these gigantic domes with countless chocolate crumbs on top that cover a delicious cream, bananas and a chocolate cake.

Did you know that this wonderful cake dream is also available in small sizes? In this recipe, we’ll show you how to do it, and we’ve given our cream a very special flavor finish.

For this you need:

For the dough:

  • 4 eggs
  • 180 g of sugar
  • 1 tbsp vanilla flavor
  • 80 ml of vegetable oil
  • 100 ml milk
  • 3 tbsp cocoa
  • 240 g flour
  • 12 g baking powder

For the coconut cream:

  • 400 g cream cheese
  • 200 ml creamy coconut milk
  • 3 tbsp coconut flakes
  • 1 tbsp lemon juice
  • 100 g powdered sugar
  • 150 g melted dark chocolate

1.) To make the coconut cream, whip up coconut milk with powdered sugar. Then stir in the remaining ingredients, except for the chocolate, and put the cream in the cold.

2.) Beat eggs and sugar for the dough until frothy, then stir in the vanilla flavor, oil and milk. Finally, fold in cocoa, flour, and baking powder. Then spread the dough on a greased baking sheet and put the whole thing in the oven at 180 ° C for 15 minutes. Then let the cake cool down.

3.) Melt the chocolate in a double boiler and then pour it onto the cream. Gently rock the bowl so that the chocolate spreads.

4.) Wait until the chocolate has set again, break it up with a spoon and then stir the pieces into the cream. Put the cream in the cold again.

5.) Poke circles out of the cake with a glass and carefully lift them off the baking sheet.

6.) Cut the bananas into manageable pieces and place one piece each on a cake circle.

7.) Spread the coconut cream around the piece of banana and shape it into a small dome.

8.) Crumble the remnants of the dough that are still on the baking sheet.

9.) Scatter the crumbs over the domes, alternatively you can carefully roll the cakes through the crumbs – when served, the appetizers look like small molehills.
